Oven Roasted Vegetables
Oven roasted vegetables have a completely different taste and texture than steamed vegetables.
Mike was really surprised at how good this was!
Oven roasted vegetables ingredients :
2 crowns fresh broccoli (cut up to remove main stalk)
2 pound bag of baby golden or red potatoes (quartered or diced depending on size)
1/2 cup extra virgin olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon creole seasoning
Other options, add onion, bell peppers, cauliflower, sliced carrots, whatever you like!
Cooking Oven roasted vegetables:
Preheat oven to 425 F.
In a large mixing bowl, combine the vegetables, seasoning, and oil.
On a baking pan, spread out vegetables evenly.
Place in oven and bake for 15 minutes.
Remove from oven and toss vegetables.
Bake additional 15 minutes or until potatoes are softened.
Serves well with beef, chicken, or shrimp.
