Quick Cooker Recipes Red Beans and Rice Ingredients

Aidells Andouille Sausage

1 pound package of dry red or kidney beans
1 pound spicy sausage (sliced)
4 cups chicken broth
1 cup water
10 ounce package of seasoning blend (chopped onions, bell peppers, and celery)
3 tablespoons olive oil or vegetable oil
3-4 cloves garlic (minced)

Rice

1 cup long grain white rice
1½ cups water
can be doubled if needed

Quick Cooker Recipes Red Beans and Rice

Using the PC Quick Cooker, turn the dial to “Sear”.
Add the oil, seasoning blend and sliced sausage.
Stir until vegetables are translucent.

Rinse the beans in a colander and then add to Quick Cooker.
Add in the 4 cups chicken broth and 1 cup water.
Stir well.

Place the rack on top of the beans and liquid.

In the Quick Cooker’s ceramic pot, add 1 cup long grain white rice and 1 1/2 cups water.
Place the silicone cover over the ceramic pot and place in the special rack with handles.
Lower the rack into the Quick Cooker.

Place the Quick Cooker lid on.
Make sure the steam valve button is flush with handle and the steam valve is down.
Turn the dial to the “Beans” setting. Press “Time” and the “+” to change the time to 60 minutes.
Press “Start”.
The Quick Cooker will begin to heat up and create pressure.
The 60-minute timer will begin once pressure is fully achieved.

The timer will chime once 60 minutes have past.
The timer will automatically begin to count upwards.
After 10 minutes, manually release the steam and remaining pressure by pressing the steam release button.
Then, carefully turn the lid to remove and place aside.

Remove the ceramic pot and rack.
Remove the inner rack.
Stir red beans and sausage well.
Mash a few of the beans if you want to thicken your gravy.
Season further to taste if needed.
Be careful to remove the silicone lid on the ceramic pot with rice.

  1. I attempted this recipe as directed. First, the beans were not fully cooked. Second, the rice turned out gummy. What season packet did you use?

  2. Aaron, THANK YOU for getting in touch. We have changed the recipe time on the website thanks to your note.

    First of all, we change the time to cook from 40 minutes to 60 minutes. This will make the beans to cook better as well as the rice.

    We also recommend soaking the beans if you have time. We now put our beans in a pot to soak in the morning to cook that evening.

    We don’t use a seasoning packet, we just add Tony’s Creole Seasoning and granulated garlic to taste.

  3. Hi. Soaking ahead defeats the purpose of making a quick dish. Doesn’t the quick cooker “beans” instructions read “28” minutes?

  4. Hi Alli, Thank you for your questions.

    Yes, you can cook the beans without soaking them. We have done it both ways, and it does work either way. Maybe we’re just old school, but if we know ahead of time we’re gonna be making the red beans, we do go ahead and soak them.

    If we just decide to make them spur of the moment, we go ahead without soaking them.

    I can tell you from experience that 28 minutes will not give you soft beans.

    We put it on the “beans” setting, then adjust the time up to 60 minutes.

  5. The time in the instructions has not been changed to 60 minutes. I started cooking and after reading the comments section that I needed to set the cooker to 60 minutes. You might want to change it.
